Try this super refreshing seasonal soup. Cool cucumbers, tangy yoghurt and fragrant herbs make for the perfect, hydrating dish on a hot summer day! Serve with some homemade garlic croutons.
4 mini or 2 long cucumbers (sliced)
1 clove garlic (peeled)
200g Greek yoghurt
20g dill or basil
olive oil
juice of 1 lemon
salt and pepper
home made garlic croutons
Step 1.
Place the cucumber, garlic, yoghurt, herbs, lemon juice, a good glug of olive oil and a generous pinch of salt and pepper to a blender.
Step 2.
Blend until smooth and taste for seasoning adding extra salt and pepper if needs be.
Step 3.
Place in the fridge overnight or for at least 12 hours so it is super cold.
Step 4.
Serve with some extra chopped cucumber, fresh herbs and a drizzle of olive oil on top and some crispy croutons on the side.
