Kohlrabi is an uncommon vegetable which we grow a lot of at the farm. We absolutely love it! Its really delicious with a flavour like mild turnip but with a more crisp texture. It is is bang in season right now and this is a great simple recipe for making the most of it along with local new potatoes. 

Ingredients 


4 medium sized Kohlrabi
300g New potatoes
225ml Single cream
200ml Creme Fraiche
1 tbsp Dijon mustard
2 Sprigs of Thyme (Finely chopped)
Salt and Ground White Pepper
50g Parmesan (Grated)
Knob of Butter

Method 

 
Step 1.

Pre heat your oven to 160c. Firstly in a large mixing bowl combine the cream, creme fraiche, mustard, a pinch of salt and white pepper, the thyme and half the parmesan and mix well. 

Step 2.

Next peel your kohlrabi and finely slice using an attachment on your food processor or by hand using a mandolin slicer. Get it is thin as you can! Then do the same with your New potatoes. Add the sliced kohlrabi and new potatoes to the bowl and mix well until all the veg is covered in the creamy mixture. 

Step 3. 

Grease the bottom of an oven dish with butter and pour in the kohlrabi and potatoes along with all the mixture. Spread the mixture into the oven dish until evenly distributed then top with the rest of the parmesan and a little drizzle of olive oil. Bake in the oven for 45 mins until golden on top, then place some foil over the top and bake for a further 30 mins. Great addition to a sunday roast, or on it’s own with some simple steamed greens!
